Cold Storage Systems :
It is the preservation of a certain volume in outdoor conditions by means of insulation material and cooling systems.
The purpose of cold rooms is to store perishable food products for a longer period of time. The temperature in the cold storage should be controlled and the change should not be excessive. As the temperature increase will cause the bacteria to revive even for a short time, it reduces the deterioration time of the product.
The purpose of use of the warehouse is taken into account in determining the temperature and humidity of the cold storage
1- The product to be stored and the way of packaging:
Each product has its own humidity and temperature value. For products to be stored in packages, packaging materials should also be included in the heat load calculation.
2- Stacking Method: While placing the product inside the cold storage:
The flow of the cooled air coming from the evaporator should not be interrupted and should be spread homogeneously throughout the warehouse. In this way, homogeneous cooling is provided for products located at different points in the warehouse, and product quality is preserved.
3- Evaporator:
The number of evaporators in the cold storage and the amount of air passing over it is important for the quality of the storage. The high airflow rate in the products that need to be stored sensitively will affect the quality of the product. Likewise, low-speed airflow in products that require rapid cooling directly affects product quality.
4- Cold storage temperature selection:
It is possible to collect cold storage in 3 groups. It is determined according to the temperature and desired conditions.
4a- Cool Storage Warehouses:
Contains products to be stored at +5 /+15 °C. In general: Products such as Banana, Eggplant, Potato, Cucumber, etc.
4b- Cold Storage:
For products that are suitable to be stored between -2 / +4 °C.
These products are cheese, fresh meats, grapes, apples, etc.
4c- Frozen Storage Warehouses:
This name is given to the type of storage between -18 / -25 °C. All frozen products should be stored within this temperature range. The products should be placed in the storage rooms with the core temperature lowered to -18 degrees Celsius.
